Sometimes you don't want to finish a bottle of wine… So rather than get rid of it, why not use it differently ? So, there is no question here of simple pasta tasted with a glass of red wine on the side, but indeed pasta cooked in the nectar of the gods. When cooking, the alcohol evaporates and the pasta then takes on a very sweet taste and a purple color.
Ingredients for this recipe
- 80 g penne - equivalent to a good handful —
- 100 g smoked bacon — a tray —
- 1/2 Red onion
- 1 clove garlic
- 1 tsp olive oil
- Parmesan pieces — in the absence of Gruyere cut into strips with a peeler —
- 1 glass of red wine
- parsley
- nuts — little more —
Peel and chop the garlic and mince your half onion and set aside. Start cooking the pasta in boiling water - of course, following the cooking recommendations on your package —. In a frying pan over high heat, pour in the olive oil and brown the bacon for 2-3 minutes. Then set aside the bacon and brown the onion and garlic in the fat of the bacon. Once the onions are very tender, return the bacon to the pan and add the glass of red wine - that you should not drink ! - and reduce for 5 minutes. Once the pasta is cooked, drain and pour them into the pan, add the parsley and mix. Put on a plate with a few shavings of Parmesan and walnuts.
