Some explanations about oysters ?
Oysters are the guests of the holiday meals as well as foie gras or smoked salmon. Contrary to popular belief, oysters are eaten all year round… not just the famous french months ending by "re".
For the record, it is said to be Louis XV himself, who decided to introduce this rule. At the time, the transport was long… and heat and oysters don't mix well. Moreover, it was important to safeguard this resource whose reproduction took place during these famous months. From now on, the date only affects the taste of the oyster in question. You should know that it is simply more milky during the breeding season.
Fine or special appellation ?
When it comes to choosing oysters, this is the first question to ask yourself. These two oysters "crus" were introduced by the Marennes-Oléron oyster-farming area to designate the maturing.
So, fine oysters are sweet oysters while special oysters are more generous and long in the mouth. For warm and gratinated oysters, I recommend you to choose specials. On the contrary, fine oysters are perfect for raw tasting.
Variety : hollow or flat ?
There are over a hundred species of oysters, but France is focusing on the breeding of only two of them : the flat and the hollow. The first one, also called belon, is quite round and with a tender flesh and a pronounced taste. The second is of more elongated shape and the most common on our tables.
Size : n ° 0 or n ° 4 ?
Then comes the question of the size of our oysters. Remember that the higher the number, the smaller your oysters will be. If you are unsure which size to choose, I recommend you to take oysters number 3. These medium-sized oysters are particularly popular.
What is the weight of oysters according to their sizes ?
- n° 5 : of 30 g to 45 g
- n° 4 : of 46 g to 65 g
- n° 3 : of 66 g to 85 g
- n° 2 : of 86 g to 110 g
- n° 1 : of 111 g to 150 g
- n° 0 : Beyond 151 g
Salty taste or nutty aroma ?
Many parameters go into the flavor of the oyster : temperature, nature of the seabed, type of plankton, water salinity… As for wine, the terroir plays a key role in the style of oysters.
Brittany oysters are salty and tasty. Those of Normandy are more fleshy with very light notes of hazelnut. Those of Bouzigue will be the most iodized. Finally, Charente-Maritime oysters will be the least salty.
Certainly less known, but yet very interesting to taste, Saint-Vaast-la-Hougue oysters are characterized by this nutty taste so characteristic and appreciated by amateurs.
Which wine to drink with raw oysters ?
Oysters are most often eaten raw. Of course, we will avoid pairing them with a red wine. Tannin and fruit will conflict with the salty taste of oysters. Whether they are natural, accommodated with a turn of a pepper mill, a few drops of lemon juice or even chopped shallots marinated in vinegar, we will pair them with a dry white wine.
To find the perfect match, we're going to choose to a lively and tense wine. It will find a good balance with the fatty texture of oysters. I advise you to favour a mineral wine with a beautiful acidity, even a certain salinity that will go perfectly with your oysters.
Which appellations to choose with oysters ?
The Chablis appellation is a good option for a successful pairing. This Burgundy wine, of the Chardonnay grape variety, has a pale color, slightly golden, with very light green reflections. The nose is fresh, with notes reminiscent of flint and citrus. The mouth is most often mineral with notes of gun stone and a beautiful acidity. A Chablis will be perfect to accompany the Belon.
The Muscadet Sèvre and Mène is also a successful classic pairing. This Loire Valley wine is made from the Melon de bourgogne grape. It is adorned with a pale gold color with green highlights. The nose is fresh and powerful recalling floral and fruity aromas. The palate is fresh on the attack and mineral. When it is "élevé sur lie" - aged on lees - we discover a more supple wine. Breeding on lies gives Muscadet's wines freshness and a pearly character. It will go perfectly with oysters from Paimpol !
You can also choose a Sancerre and its Sauvignon grape. This appellation produces fresh and subtle white wines with aromas of white fruits and citrus fruits, with some subtle exotic fruit notes. Generally, they also offer assertive minerality with a supple attack and a rich and creamy mouth.
For a more unusual pairing, a varietal Alsace wine Riesling, Sylvaner or Pinot blanc grapes will do wonders ! A Jurançon sec is also a very nice way to enjoy your oysters in a more unexpected pairing.
Which sparkling wine to choose with oysters ?
If you absolutely want a champagne, I recommend a Blanc de blancs champagne. It offers all the finesse and floral bouquet of the Chardonnay grape variety.
Since a good crémant is always better than a bad champagne, I advise you to be surprised by a Crémant from Loire Valley, from Jura or even Burgundy.
Which wine to drink with hot oysters ?
Hot oysters simply gratinated, poached or accompanied by a sauce become more tender and tasty. In addition, they seduce those of us who are reluctant to raw shellfish. The iodine flavour persists, but the new texture provided by this preparation no longer necessarily requires an acidic and lively wine as with raw oysters.
We can then turn to slightly fatter wines, more elaborate and with more texture as in Burgundy with a Chablis Grand Cru or a Mâcon-Villages.
The whites of Bordeaux vineyard can also be very suitable. The appellation Pessac-Léognan white offers rich wines with notes of white flowers, hazelnuts, citrus fruits and peach, the aromatic finish of which will go very well with your gratinated oysters.
A Riesling Grand Cru from Alsace vineyard turns out to be the perfect match for this dish. The sparkling wines, as far as they are concerned, will bring to the pairing their tangy mouth very adapted to this pairing !
My selection to pair oysters
To rethink this article, I decided to focus on a wine that is not used to pair oysters. As well, a food and wine pairing is wise when it corresponds to what you want for the occasion. Not wishing to taste a wine with too much acidity, I therefore turned to the cuvée Confidence of the Eole estate in the Alpilles appellation.
This pure Roussanne with a beautiful freshness expresses beautiful aromas of citrus fruits and white flowers that go wonderfully with oysters. The wine's barreling for one year brings hazelnut aromas that are perfectly complementary to those of the oysters chosen..
