For my part, this Nicoise salad recipe was a great opportunity to uncork a very fine wine from the Alpilles. This is the cuvée Breath of Aeole from the Eole Estate.
This rosé wine organic and without added sulphites delivers a slightly orange tint. In the glass, this rosé wine reveals subtle aromas of red berries and white peach. It develops a beautiful freshness balanced by this fruity. This wine is a blend of Grenache majority and Syrah, of Cournoise and Cinsault.
The freshness of this wine balances the powerful aromas of the anchovies and the salty flavor of the latter..

For this Nicoise salad recipe, we forget the existence of red wines… Tannins, even light, do not mix well with the aromas and character of our preparation.
