What a beautiful season that autumn ! Trees are stripping, while we dressing more. Microbes point the tip of their nose, while ours is blocked. Rain appears, while the terraces disappear. I never understood the people who could enjoy this season… Yet, autumn is a good time to enjoy wine.

But it is also the month of cucurbits ! "You just called me cucurbita-what ? " Don't get angry too quickly, this is not an insult. This word simply designates the families of plants cultivated for their fruits : pumpkin, courgette, winter squash, red kuri, and so on. — If you ask yourself the question : Yes, a squash is a fruit and not a vegetable

To cook, I advise you to favor winter squash over squash, its flesh is slightly sweeter and tastier. Pumpkin has a pronounced chestnut taste and is often accompanied by spices such as nutmeg or cinnamon.

Which wine can you drink with pumpkin soupich ?

Easy pumpkin soup recipe (4 persons – 45 minutes) :

  1. Cut the flesh of a quarter of a pumpkin into large cubes.
  2. In a casserole dish, sauté a sliced onion in a little olive oil
  3. Add your diced pumpkin and cover with water
  4. Let it boil 45 minutes and stick a fork in a dice of pumpkin - if it fits easily the cooking is good, otherwise let it boil again
  5. Mix everything and add a brick of liquid crème fraîche, salt, pepper
  6. To serve

Pumpkin soup is a smooth and delicious dish. It goes very well with a dry white wine not woody and with a beautiful vivacity and a light bouquet. Simple dish, simple wine. You can choose a regional pairing with a white Côtes-du-Rhône or a white wine from Ardèche, but a young white Burgundy wine will also do wonders.

Which wine should you drink with a pumpkin gratin ?

Easy pumpkin gratin recipe (4 persons – 45 minutes) :

  1. Preheat your oven to 210 °C
  2. Cut the flesh of a kilo of pumpkin into large cubes. Sauté the peppery and salted pieces in a covered saucepan over low heat
  3. After 15 minutes, mount the fire to medium and remove the cover
  4. Mix 2 eggs in a bowl
  5. When pumpkin crashes easily, remove from heat and crush with fork
  6. Mix the pumpkin, eggs, 2 tablespoons of heavy cream, salt and pepper
  7. Butter a gratin dish and distribute your mixture then sprinkle with grated Gruyère
  8. Bake 15 minutes — let it gratin at your convenience

As for the soup, I invite you to choose a fairly light and lively young unoaked dry white wine. A white Côte d'Auvergne or a white Beaujolais are perfect to pair this dish.

You can also go for a light red wine with little tannin to pair this dish.. A Pinot Noir from Alsace or a red Beaujolais are best suited to meet these conditions, especially if you accompany your gratin with poultry.

Which wine can you drink with a pumpkin pie (sweet) ?

Easy pumpkin pie recipe –Pumpkin Pie- (4 persons – 1h25) :

  1. Cook in a saucepan for 25 minutes 600 g of pumpkin flesh cut into cubes then mash it and leave to cool 20 minutes
  2. Preheat the oven to 200 °C
  3. Mix the mash with 20 cl of liquid cream, 2 eggs, 100 g brown sugar, 1 pinch of cinnamon powder and 50 g ground hazelnuts
  4. Unroll a shortcrust pastry in a mold then pour the mixture
  5. put everything in the oven for 20-25 minutes
  6. Serve cold

To pair this typically American dessert, a slightly sweet white wine is ideal to echo the sweetness of this tart. A Pinot Gris from Alsace, less sweet than the traditional Gewurztraminer, is a wine that plays its role perfectly to pair your dessert. You can try a dry rosé with a Beaujolais rosé or a Loire rosé — Saint-Pourçain or Valençay for example —.
