Once upon a time there was the Chandeleur

The Chandeleur is actually the candlelight festival — and not pancakes —, which always takes place on February 2nd. It's a pagan folk festival linked to light. It is also a Christian holiday corresponding to the presentation of Jesus in the Temple. It was customary before lighting candles at Midnight to symbolize purification. The round shape and golden colour of the pancakes are reminiscent of the Sun and the time of year when the days become longer — Oura !

Now that you know the history of pancakes and the Chandeleur, it's time to find out how to pair them.

We celebrate Candlemas every year on February 2nd, exactly 40 days after christmas. Ask a Breton what to drink with pancakes and he will say : "Cider in a bowl ! ". What if for once, we were kind of upsetting the established rules by trying to drink wine ?

Which wine to drink with buckwheat pancakes / salted pancakes ?

Milk, eggs, buckwheat flour and you get the creamy dough from the patty that you can garnish generously. Like all Breton dishes, salted pancakes are dishes quite - Downright — rich. So you can choose a red wine. But beware, it must be chosen with care.

Which wine to drink with sweet pancakes ?

While the buckwheat pancakes go very well with red wine, sweet pancakes instead prefer effervescent wines. It is quite possible to pair the whole meal with an effervescent wine like a Champagne, a Vouvray or a Blanquette de Limoux or the very famous Clairette de Die - my personal choice —. However, a too dry effervescent will be too acidic and will pair pretty badly with your pancakes. If you want to pair your entire meal, opt for a Champagne, Crémant or brut sparkling wine with aromas of white fruits.

As for pairing only your sweet pancakes, choose a half-dry sparkling wine. It will be sweeter and go very well with your pancakes with sugar - no, you don't put butter in the pancake with sugar - or with jam. To make it more original, you can offer a sweet rosé such as a rosé Muscat, or a sparkling rosé wine.

If you don't like bubbles, head for a fruity, slightly sweet white wine like a Chenin of Loire Valley.

Chocolate pancakes ask for a more powerful wine. A fortified wine like a Banyuls, a Rivesaltes or a Maury ; but also a liqueur wine such as a Pineau des Charentes or a Port will echo the bitterness of the cocoa contained in the chocolate. If you put in addition to chocolate, some red fruits or sour cherries, turn to a vintage or rimage Sweet Natural Wine. They are characterized by the absence of aging in wood and therefore have more fruity aromas.
